Oriental stir-fry with Claresse®

Serves 4 | Preparation time: 30 minutes

  • 500 gram Claresse® fillets
  • 1 clove garlic
  • 1 sweet onion
  • 1/2 lemon
  • 1 large carrot
  • 2 spring onions
  • 1/2 cucumber
  • 3-4 tablespoons oil
  • 100 ml wok sauce (ketjap-sesame or sweet-sour)
  • (sea) salt

1. Cut the Claresse® fillets into 3-cm pieces, and sprinkle on all sides with a little salt. Cut the clove of garlic into thin slices, chop the onion into half rings and slice the spring onions at an angle. Scrape the carrot and cut into thin slices, 5 cm long. Cut the cucumber into slices at an angle and then in half.

2. Heat 2 tablespoons of oil in a wok or frying pan, stir-fry the garlic slices for 1 minute and remove from the fat with a skimmer. Carefully stir-fry the Claresse® pieces for 5 minutes in the garlic oil and remove them from the pan. If necessary add a little further oil and stir-fry the onion and carrot for 5 minutes.

3. Add the wok sauce and lemon juice to the wok and bring to the boil, while stirring.

4. Add the fish, garlic, spring onion and cucumber, carefully stirring the entire content for a further 1-2 minutes until thoroughly warmed through. Serve with white rice.
